Where do you get your Meat, Chicken, “Cheeses” and Produce?
Beef: Creek Stone Farms All Natural Black Angus Beef: We use 90/10 Beef (no trans fats); 80/20 is used for our hamburgers. No Antibiotics – EVER, No Added Hormones – EVER, No Growth Promoting Drugs – EVER, No Artificial Ingredients - EVER!
** We love grass fed beef, but right now it is just too expensive and not feasible for us to use in everything we make.
Chicken: Murray’s All Natural Boneless Chicken Breast: Raised without the use of antibiotics, growth drugs or hormones.
**Our wings are NOT all natural.**
Sausage: Jones Dairy Farm; Certified GF by Gluten Intolerance Group (GIG) to 10ppm.
*They process milk, soy and mustard in their facility and on their equipment but clean, sanitize and also conduct allergen swab testing for the presence of milk, soy and mustard. For more information:
Deli Meats and Cheeses: Dietz and Watson All Natural Meats and Cheeses; Certified GF by the Celiac Support Association (CSA) to 5ppm.
-From the All Natural Line we use: Premium Angus Roast Beef (steak and cheese), Applewood Smoked Turkey and Applewood Smoked Ham. These are Low Sodium meats.
-For the Italian Cold Cut we use: Capocolla Ham, Genoa Salami, Sopressata and Mortadella (no nuts). Some Italian meats contain sodium nitrite and casein, so the Italian Cold Cut is only available from our Green Kitchen.
-For the Rueben Sandwich we use: Corned Beef Brisket.
**We slice all meat in house on dedicated slicers. We slice cheese and Milk-Free cheeses on dedicated slicers on site. These items are also available for purchase by the pound. Our slicers are cleaned and sanitzed between different meat protein cuts. We individually portion meats into plastic bags after slicing to prevent cross contact of meat proteins on our cooking lines. Daiya “Cheeses”: Certified GF by the Celiac Support Association (CSA) to 5ppm
Note: Pea Protein returns to Daiya Slices in late 2018. The Cutting Board Shreds that we use on pizzas use Potato Protein!
-In 2017/2018 Daiya re-formulated their slices and shreds and removed the pea protein and carrageenan!
-In late 2018, and ingredient shortage caused Daiya to go back to using Pea Protein in their sliced cheezes and some shreds.
-Please see their website (link below) for ingredients. We use their Cutting Board Mozzarella Shreds for pizzas and Mac N Cheeze from our Blue Kitchen and we use their sliced cheeses for sandwiches in the Blue Kitchen. The bakery will utilize their cream cheese for carrot cupcakes and "cheese" cakes. As of 03/18 their cream"cheese" still hase pea protein and carrageenan in it.
** "The Daiya facility is free of wheat, rye, barley, soy, dairy (casein, whey and lactose), eggs, rice, peanuts and tree nuts except for coconut oil. If you have an allergy, talk with your allergist about coconut oil prior to ordering items with Daiya "Cheese". Daiya "cheeses" do not contain cholesterol. The FDA considers coconut to be a nut, although it is not a nut; it is derived from the palm family and is actually a fruit/seed. The Daiya “cheese” used on the blue line contains coconut oil. However, according to Daiya, they use "coconut oil which is purified to the point where it does not have the coconut protein; which would be the sensitizing or allergenic material within coconut."
Daiya utilizes “Vegan Natural Flavors”; according to Daiya: “Due to trademark restrictions from our flavor suppliers we are not able to list the source of ingredients. However, we can tell you that they are plant based (mainly oils and essences), 100% GMO and MSG free. The flavors are natural and do not contain many of the common allergens including soy, dairy (casein, whey and lactose), gluten, eggs, rice, peanuts and tree nuts (expect coconut oil), mustard, sesame, garlic/onion, potato, or mustard."
