Do you use Xanthan Gum?
Yes. Xanthan Gum helps hold gluten and allergen free breads and desserts together and it also helps reduce crumbling. (Foods that contain Gluten don’t have this issue!) It is absolutely necessary when baking gluten-free breads and desserts. We use the least amount necessary to hold our products together.
Basically, Xanthan comes from the dried cell coat of a microorganism called Zanthomonas campestris and it is actually an all-natural ingredient.
What about Xanthan gum and corn allergy? It is derived from the fermentation of corn sugars; but all corn sugars are removed in the processing of xanthan gum. Xanthan gum does not contain corn protein and is tolerated by most people following a corn-free diet.
However, a corn allergy can be serious and we ask you to make your own decision and consult your physician before consuming products with xanthan gum in them. (We do not use Guar Gum.)
